FICA EE and MED EE reductions from paychecks

After looking over my pay stub, I saw two recurring deductions: “FICA EE” and “MED EE.” I know they have to do with taxes on Social Security and Medicare, but I’m interested in the details. How precisely do these affect us as employees, and why are they separated on the paycheck? Exist any methods or pointers for comprehending these deductions more clearly?
